I arrived with a foil-covered pie dish and a smile I had practiced in the car. I said I brought dessert. Tom looked at me like I had announced plans to do a backflip. Linda turned from the stove and studied the dish before meeting my eyes. She asked if I baked it. Her voice sounded careful. I told her it required no baking and no sugar & took only fifteen minutes to prepare. I saw her face change to that expression people make when they expect disappointment. By the end of the evening she asked for the recipe. I watched her copy it into the small green notebook she keeps in the kitchen drawer. That was the one with her mother’s pierogi recipe & her grandmother’s jam. I got in the car that night and cried. It was the good kind.

Base: 200g sugar-free oat cookies, 60g melted butter 1 tsp cinnamon

 Filling: 500g full-fat cottage cheese, 3 tbsp erythritol or honey, 1 tsp vanilla, zest of 1 lemon, 150ml heavy cream (whipped)

Topping:Fresh berries mint leaves

Step 1. Crush the cookies into fine crumbs & mix them with the melted butter and cinnamon. Press this mixture firmly into a pan and place it in the freezer for 5 minutes.

Step 2.Blend the cottage cheese until it becomes completely smooth. Add your choice of sweetener along with the vanilla and lemon zest. Taste the mixture & adjust the sweetness until you are satisfied with the flavor.

Step 3.Carefully fold the whipped cream into the cottage cheese mixture. Make sure to keep the texture light and fluffy.

Step 4.Pour the filling over the prepared base and arrange fresh berries on top. Refrigerate for at least 30 minutes before serving. For best results leave it in the fridge overnight.
